黄姜鸡Turmeric chicken



黄姜料Turmeric Paste
黃薑
Turmeric 100g 

香茅Lemongrass 3根/pcs
南姜
Galangal 1寸/inch 

蔥頭仔Buah Keras 10粒/pcs
辣椒糊Chili paste 1湯匙/tbsp
菜油Vege- oil 3湯匙/tbsp
清水water 50ml
以上所有材料 切、剝、備好之後用攪拌機打爛成糊。
All of the above material cutting , stripping , using mixer smashing into paste.


材料:
调好了的黄姜料
四对鸡腿+鸡上腿(切块)
香茅 3根(压扁)
蒜米 3瓣(切幼)
红葱仔 4粒 (切幼)
疯叶 4片
加哩叶  (一汤匙)
一汤匙 糖(少许)
耗油 一汤匙
石古仔 3粒 (压扁)
椰浆 适量


腌鸡:
黄姜粉 两汤匙
姜粉 半汤匙

做法:
1)先把鸡肉洗干净,腌上半个钟。
2) 爆香蒜米,红葱,加入石古仔, 香茅及鸡腿,干炒一下。
3)加入仁黄姜料,注水,耗油,及糖,水盖过鸡腿小火焖上20分钟。
4)当酱料够凝固,加入椰浆,疯叶及加哩也提味,盛桌。

Ingredient:
Mixed turmeric paste
Four pairs of drumsticks + chicken leg (diced)
3 pcs Lemongrass  (crushed)

4 pcs Lime leaves 
1 tbsp of curry leaves
A pinch of Sugar
1 tbsp of Osyter Sauce

Buah Keras (crushed)

3 pcs Garlic  (chopped)
4 Red Onions (chopped) 

Coconut milk 

Marinate (chicken):
2 tbsp Turmeric powder
1/2 tbsp Ginger powder

Steps:
1) Clean the chicken , and marinated about 30 minutes.
2) Saute garlic, red onion, buah keras, lemongrass, chicken, fried for few minutes.
3) Add turmeric paste, water, oyster sauce, and sugar. Water must overshadowed chicken. Small fire to stew for 20 minutes.
4) When the sauce enough thick.Add coconut milk, curry leaves and lime leaves.
