咖哩山猪肉Wild Boar Curry


第一次煮山猪肉的我,
笨笨的把肉切块,
结果煮上两小时。
切片的大概一小时小火焖就行了,
切块的耗时两个钟左右才算软,
要软透,必须两个钟以上。
要好吃必须放隔夜才入味。

材料 :
山猪肉 600gm 切块
马铃薯5粒 切块
葱6粒
蒜米6粒

调味料:
印度人搅拌好的辣椒(有黄姜、蒜米、大葱、香矛及辣椒)
咖哩 一小包
黄姜1小塊
南姜1小塊
小茴适量
大茴适量石估仔 6粒

步骤:
1)准备好材料,用搅拌机掺点水搅幼。

调色料: 
麻风柑叶
八角 3粒
桂枝 1块
辣椒干15片
香茅4支(压扁)
咖哩叶30片
腌肉:
姜粉1茶匙
咖哩粉 1汤匙

做法:
1) 把山猪肉及马铃薯清洗,切块。
2) 用姜粉及咖哩粉腌15分钟。
3) 爆香蒜米、葱、调色料、加入猪肉大火炒至变白。
4) 加入调味料,小火焖上两小时 。肉够软就可收汁上桌。
*由于我是第一次煮山猪肉,才发现焖山猪肉要耗上整个钟。
薯我早放,可是焖了一下觉得不对劲,就把它起锅,最后20分钟才放。

Ingredients:
Wild boar meat 600gm ( cut cube)
5 pcs potatoes (cut cube)
6 pcs onions (chopped)
6 garlic (chopped)

Seasonings:
Indian chili (with ginger, garlic, onions, lemon grass and tumeric)
A packet of curry ( meat )
1 small piece of ginger
1 small piece of Lengkuas/galangal
A pinch of Jintan Manis/ Fennel
A pinch of Jintan Putih/ Cumin
Buah Keras/Candlenut 6pcs

Steps:
1) Ready for all ingredient, mixed a little and blender it.

Tints:
15pcs Lime leaves
3 pcs star anise
1pc Cinnamon
15pcs Dried chilli
4pcs Serai/Citronella  (squash)
30pcs curry leaves

Marinated (meat):
1 tsp ground ginger
1 tbsp curry powder

Steps:
1) Washing wild boar and potato , diced it.
2) Marinate wild boar for 15 minutes with ginger and curry powder.
3) Saute garlic, onion, tints and add wild boar stir-fry until color become white.
4) Add seasonings and slow cook for 2 hours. Last 20 minutes add in potatoes.
I was first time cooking wild boar, and don't know that it spent much time .
